PW French Breakfast Puffs
So Yummy! That's all I need to say.
Ingredients
3 c. flour
3 t. baking powder
1 t. salt
1/2 t. ground nutmeg
1 c. sugar
2/3 c. shortening
2 eggs
1 c. milk
Coating:
2 sticks butter
1 1/2 c. sugar
3 t. ground cinnamon
In a large bowl, stir together the flour, baking powder, salt and nutmeg. Set aside
In another large bowl, cream together the sugar and shortening. Add the eggs and mix again. Alternate adding one-third of the flour mixture and one-third the milk to the creamed mixture, betting well after each addition.
Fill lightly greased muffin cups 1/2 to 2/3 full (I like to fill them less so you get a nicer round top and, dare I say, no "muffin top"). Bake for 20 to 25 minutes until golden in a preheated oven at 350 deg.
While baking, prepare the coating by melting the butter in a bowl. In a separate container, combine the sugar and cinnamon. Dip the warm muffins in the butter, coating thoroughly. Then roll in the cinnamon-sugar mixture.

Pecan Pie Muffins
Holy PECAN! They weren't kidding. Make these. Make these now :PPecan Pie Muffins
And when you make them...
Please forget about eating healthy for just a little bit.
Please don't get confused when the recipe calls for softened butter. Just use melted like the blog shows you.
Please do not fill the cups more than 2/3 full. I'd probably even do half full, especially if doing them mini style like me.
Please remove them from the cups while still warm. They will get stuck. At least they did for me.
Please dot them with a little butter. Like I said, they weren't kidding.

Monkey Bread
3 cans of Buttermilk Biscuits (the non-flaky ones)
1 c. sugar
2-3 t. cinnamon
1/2 c. brown sugar
2 sticks of butter (1 c.)
Preheat that oven to 350.
Open each can of biscuits and cut each biscuit into quarters.
In a gallon-sized seal-able bag, mix 1 c. sugar with cinnamon. Toss biscuit bites into the bag, seal, and shake until all bites are coated with sugar mixture. Place coated biscuit bites into 12-cup bundt pan and set aside.
In a small saucepan, melt butter over medium-high heat. Add the 1/2 c. brown sugar and stir until dissolved. Remove from heat and pour over biscuit bites.
Bake for 30-40 minutes until top has a nice dark brown color to it. Remove from the oven and let cool for 15-30 minutes. Place a serving plate on top of the bundt cake pan and invert to remove the monkey bread from the pan. Enjoy!!

Easy Cheesy Garlic Drop Biscuits
We had some for breakfast this morning. It was too cold for cold cereal, we're out of eggs, and we're tired of oatmeal. Good thing we keep a box of Bisquick around!
So the recipe for Cheesy Garlic Biscuits on the box is good, but sometimes end up a little too dry and don't offer enough flavor. So I changed it a little bit :)
I mixed 2 cups of Bisquick, about 1 c (maybe a little more) of shredded cheddar cheese, 2/3 cups of milk, about 1/2 tsp of garlic powder, and about 3 tbsp of cold butter that was chopped up into about 1/4 inch cubes. I mixed it all together until I didn't see any more dry mix. Then I dropped the dough by about 1/2 c. spoonfools onto a foil lined baking sheet sprayed with cooking spray. I baked them in a 450 deg preheated oven for 8 minutes.
We don't have a good enough camera to show the pockets of stringy melted cheese when you break the biscuits in half. YUM!
